80g bitter orange peels

20g Spanish orange peels

20g lemon peels

0.7g peppermint (check)

8g umani lime

SUGAR: 7%

add 10 liters of water to bring down the proof to 140

Let infuse for 30 min at 150

Start distillation

The heads will be 500ml being whiskey, as opposed to 100ml of neutral grain spirit from 30 plates

let it run until the cut then start wetting the dephlagmator

When getting close to the final cut, the flavor become monotone, being the bitterness of the orange predominant, then it gets less orangey and a little smoky, probably from the umani
