10g lemon peels

8g juniper

1g cardamom

Bittering (2 weeks)

12g gentian

6g rhubarb

3g chinchona

SUGAR: 3%

DISTILLATION

Throw out first 100ml

Orange flavor comes out strong in the beginning

The freshness of the lemon is coming in second

There's some oiliness (is normal for it to come out in the beginning, is not good to taste too much of it)

Then cardamom and juniper are coming through

Then cardamom is coming out stronger

The brightness of the lemon comes back

Bottling proof 92

sugar 3% (3% sugar bring down the proof of 6 degrees)

So we had 11.5 kilos of distillate at 98proof

Added 3% sugar (350g) 

proof went dow to 92

When bettering the distillate multiply by how many liters we made, normally 3.3 liters
