Cherry mash PH is naturally ok so no need to adjust it

6 plates stills:

start with 3 plates in and 3 plates out, finish with all plates open

when it starts foaming turn down the heat

Take off 12 liters of heads

Hearts in at 189proof

Hearts are nice, sweet, cherryy

Tails begin as flavor fades and alcohol become dry and bland

When it becomes a little cloudy that means you are at about 60 proof, that happens because the oils create that effect at a lower proof (as you keep distilling the proof goes lower and lower)

Cut the tails when the proof goes below 25

Collect the hearts and dilute with water to 140proof for aging

Then the kirshwasser is bottled at 100 proof
