Allspice syrup

2 cups of water

1 oz of allspice berries

demerara sugar

bring the water to boil, crush the allspice berries, put them in the water and simmer for half hour.

Strain, measure how much infused water you have and while the water is still warm add the same quantity of the demerara sugar

Note: first time I'm doing it, let's see how it comes out
